Brinjal Moju

Ingredients you will need

  • 500g brinjal
  • 80g Split green chili
  • 100g red onions
  • 2og chopped garlic
  • 2og chopped ginger
  • 10 curry leaves
  • 50 g sugar
  • 5 chopped cloves
  • 50 ml vinegar
  • 2tsp chili powder
  • 2tsp turmeric powder
  • 3tbsp mustard cream
  • 2tbsp tomato sauce
  • Salt to taste
  • Oil for frying


Dice the brinjal (1.5cm x 1.5cm) and mix with the turmeric powder and salt, then deep fry it until golden brown and put it on the side to drain oil off.

Heat 3tbsp oil in a large pan and add green chili and red onion, fry it for about 1 minute, then add the garlic, ginger, clove, mustard cream, salt, curry leaves, chili powder, turmeric powder, sugar, tomato sauce and vinegar. Mix all and cook about 2 minutes. Next add the fried brinjal and mix together well. Serve it after 45 minutes.
